Zucchini carrot sushi
Raw Veggie Sushi
 
1 zucchini
1 carrot
1 red pepper, julienne sliced
1 cucumber, julienne sliced
1 jicama or apple, julienne sliced
Microgreens or sprouts (e.g. alfalfa, watercress)
 
Slice zucchini and carrot in mandolin slicer and wrap each slice around your favorite veggies.  Microgreens with red and yellow peppers, jicama, cucumber, and apples are great choices!
